Southern Hospitality Is Memphis BBQ
At Southern Hospitality we cook our BBQ "Memphis Style". To learn
more about Memphis style BBQ we traveled down to Memphis with our award winning
BBQ chef Dr. BBQ and researched what makes Memphis BBQ so special. What we
learned was then brought back and now we feature a little bit of Memphis BBQ
right here in New York City.
Memphis is a city that takes great pride in its BBQ. Memphis serves the best BBQ in the world and has become famous for it. Every May they hold The World Championship BBQ Cooking Contest in Memphis, right where Beale Street meets the Mississippi River. BBQ is an important part of the cuisine and the culture in the Bluff City, but what exactly is Memphis-Style BBQ? And why does it stand out above the rest?
The Meat/Dry Rubs:
Memphis is probably best known for its dry BBQ. Most frequently used on ribs,
the dry style is highly flavorful and a little less sticky to eat than wet
BBQ. In the dry process, the ribs are given an extra coating of dry rub right
before serving.
A Memphis dry rub is made up of ingredients such as garlic,
paprika, onions, cumin, and other spices. But there is wet BBQ in Memphis too
and we're serving both kinds at Southern Hospitality. In the wet process we
still use the dry rub, but it only goes on before the cooking. After cooking
the wet BBQ is lightly glazed with our tasty BBQ sauce. Try the Wet Rib Dry

The Sauce:
Memphis BBQ sauce has its own unique flavors and it's an important part of
the overall flavor of the meats. The best Memphis sauces are a little sweet,
a little tangy and a little spicy. Though the specific ingredients will vary
from cook to cook, Memphis BBQ sauce is usually made with tomatoes, vinegar,
sugar and any countless combination of spices. The sauce is used as a final
layer of flavor brushed on lightly to glaze but not overpower the other flavors.
But we know it's all about the sauce for some of our guests, so there's always
a bottle on the table. Go ahead and add as much as you like.
The Extras:
In Memphis it's all about the BBQ but you need a couple great side dishes
to complete the meal. All of our sides are homemade and we've got all the classics
like coleslaw, beans, and our Crispy Seasoned Fries.
We've also got some Southern
favorites like Liz's Collard Greens, Cornbread, Macaroni and Cheese and Dirty
Rice and if that isn't enough we've added a couple of our own favorites in
Jon's Tater Tots, and Dr. BBQ's Sweet Cream Corn.. We've got Memphis style
desserts too. Granny's Pecan Pie, Dr. BBQ's Sweet Potato Pie with Jack Daniel's,
Peach Cobbler or a Hot Fudge Brownie Sundae will be a great finish to any meal.
